  1. Preheat your oven to 175°C (350°F). Lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, breadcrumbs, egg, finely diced onion, celery, carrot, milk, 5g Worcestershire sauce, garlic powder, onion powder, salt, and black pepper.
  3. Mix all ingredients thoroughly with your hands until just combined; do not overmix to keep the meatloaf tender.
  4. Form the mixture into a loaf shape and place it in the prepared pan or on the baking sheet.
  5. In a small bowl, whisk together the ketchup, remaining 10g Worcestershire sauce, and Dijon mustard for the glaze.
  6. Bake the meatloaf for 45 minutes, then remove it from the oven and spread the glaze evenly over the top.
  7. Return to the oven and bake for another 15-20 minutes, or until the internal temperature reaches 74°C (165°F) and the glaze is bubbly and slightly caramelized.
  8. Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving. This allows the juices to redistribute, ensuring a moist and flavorful result.
