- Panko Breadcrumbs 50 g · 185 kcal

- Place chicken breasts between two sheets of plastic wrap and pound them with a meat mallet until about 1/4-inch thick. Season generously with salt and black pepper on both sides.
- Prepare three shallow dishes: one with all-purpose flour, one with whisked large eggs, and one with Panko breadcrumbs.
- Dredge each chicken cutlet first in flour, shaking off excess, then dip into the whisked eggs, ensuring it's fully coated. Finally, press firmly into the Panko breadcrumbs, ensuring an even and thick coating.
- Heat vegetable oil in a large skillet over medium-high heat until shimmering, about 350-375°F (175-190°C). Ensure there's enough oil to cover about half the thickness of the chicken.
- Carefully place one or two breaded cutlets in the hot oil, ensuring not to overcrowd the pan. Fry for 3-4 minutes per side, until golden brown and cooked through.
- Remove the cooked chicken cutlets from the skillet and place them on a wire rack lined with paper towels to drain excess oil. Serve immediately, often with a lemon wedge.
