👨‍🍳 Instructions

  1. Preheat oven to 190°C (375°F). Cook chicken breast until done, then shred it finely.
  2. In a large skillet, heat half of the olive oil over medium heat. Add thinly sliced onions and cook, stirring occasionally, until deeply caramelized and tender, about 15-20 minutes.
  3. Remove onions from heat and stir in the shredded chicken, sumac, and half of the toasted pine nuts. Season with salt and pepper to taste.
  4. Lay a lavash bread sheet flat. Spoon a portion of the chicken and onion mixture along one edge, leaving space at the ends.
  5. Fold the short ends of the lavash over the filling, then roll it up tightly from the filled edge to form a compact roll.
  6. Place the rolls seam-side down on a baking sheet. Brush the tops of the rolls with the remaining olive oil.
  7. Bake for 15-20 minutes, or until the rolls are golden brown and crispy. Garnish with the remaining toasted pine nuts before serving.
