👨‍🍳 Instructions

  1. Pound chicken breasts to an even 1/4-inch thickness; season generously with salt and pepper.
  2. Dredge each chicken cutlet in all-purpose flour, shaking off any excess.
  3. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown and cooked through.
  4. Remove chicken from the skillet and set aside. Add chicken broth, lemon juice, and capers to the skillet, scraping up any browned bits from the bottom.
  5. Bring the sauce to a simmer and cook for 2-3 minutes until slightly reduced. Stir in the remaining 1 tablespoon of butter until melted and emulsified.
  6. Return the chicken to the skillet, spooning the sauce over it to coat. Garnish with fresh chopped parsley and serve immediately.
