Chicken Piccata

- Chicken Breast 150 g · 165 kcal
- All-Purpose Flour 15 g · 54 kcal
- Unsalted Butter 15 g · 108 kcal
- Olive Oil 5 g · 44 kcal
- Lemon Juice 20 g · 4 kcal
- Capers (drained) 10 g · 2 kcal
- Chicken Broth 100 g · 10 kcal
- Fresh Parsley (chopped) 5 g · 2 kcal
👨🍳 Instructions
- Pound chicken breasts to an even 1/4-inch thickness; season generously with salt and pepper.
- Dredge each chicken cutlet in all-purpose flour, shaking off any excess.
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown and cooked through.
- Remove chicken from the skillet and set aside. Add chicken broth, lemon juice, and capers to the skillet, scraping up any browned bits from the bottom.
- Bring the sauce to a simmer and cook for 2-3 minutes until slightly reduced. Stir in the remaining 1 tablespoon of butter until melted and emulsified.
- Return the chicken to the skillet, spooning the sauce over it to coat. Garnish with fresh chopped parsley and serve immediately.
