👨‍🍳 Instructions

  1. Cook pasta according to package directions until al dente; drain and reserve 1/2 cup of pasta water.
  2. While pasta cooks, season chicken breast with salt and pepper, then cut into bite-sized pieces or strips.
  3. Heat olive oil in a large skillet over medium-high heat and cook chicken until golden brown and cooked through, about 5-7 minutes. Remove chicken and set aside.
  4. Add garlic to the same skillet and sauté for 30 seconds until fragrant; then add bell peppers, zucchini, asparagus, and broccoli.
  5. Sauté vegetables for 5-7 minutes until tender-crisp; stir in cherry tomatoes and chicken broth.
  6. Return cooked chicken to the skillet with the vegetables; add drained pasta and fresh parsley, tossing gently to combine.
  7. If the sauce is too thick, add a splash of reserved pasta water to reach desired consistency.
  8. Serve immediately, garnished with grated Parmesan cheese and a pinch of black pepper.
