  1. Place each chicken breast between two pieces of plastic wrap and pound it with a meat mallet until about 1/4 inch thick; season both sides with salt and pepper.
  2. In a small bowl, combine chopped fresh spinach, crumbled feta cheese, and minced garlic to create the filling.
  3. Spread the filling evenly over each chicken breast, leaving a small border; carefully roll each breast tightly and secure with toothpicks.
  4. Preheat your oven to 200°C (400°F). Heat olive oil in an oven-safe skillet over medium-high heat.
  5. Sear the chicken roulades in the hot oil for 3-4 minutes per side, until golden brown all over.
  6. Pour the chicken broth into the skillet, scraping up any browned bits from the bottom. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until cooked through.
  7. Remove roulades from the oven and let them rest for 5 minutes before removing toothpicks, slicing, and serving with the pan sauce.
