👨🍳 Instructions
- Place each chicken breast between two pieces of plastic wrap and pound it with a meat mallet until about 1/4 inch thick; season both sides with salt and pepper.
- In a small bowl, combine chopped fresh spinach, crumbled feta cheese, and minced garlic to create the filling.
- Spread the filling evenly over each chicken breast, leaving a small border; carefully roll each breast tightly and secure with toothpicks.
- Preheat your oven to 200°C (400°F). Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the chicken roulades in the hot oil for 3-4 minutes per side, until golden brown all over.
- Pour the chicken broth into the skillet, scraping up any browned bits from the bottom. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until cooked through.
- Remove roulades from the oven and let them rest for 5 minutes before removing toothpicks, slicing, and serving with the pan sauce.
