Chicken Saltimbocca

👨🍳 Instructions
- Pound chicken breasts to about 1/4-inch thickness, then season lightly with salt and pepper on both sides.
- Place 1-2 sage leaves and a slice of prosciutto on each chicken piece, securing them with toothpicks if needed.
- Dredge the chicken pieces lightly in all-purpose flour, shaking off any excess.
- Heat olive oil in a large skillet over medium-high heat. Place chicken prosciutto-side down and cook for 3-4 minutes until golden and crispy.
- Flip the chicken and cook for another 3-4 minutes until cooked through. Remove chicken from the skillet and set aside.
- Deglaze the skillet by adding dry white wine and scraping up any browned bits from the bottom. Let it simmer for 1 minute.
- Stir in chicken broth and butter, cooking until the sauce slightly thickens, about 2-3 minutes.
- Return the chicken to the skillet, coating it in the sauce. Serve immediately, garnished with extra fresh sage if desired.
