  1. Pound chicken breasts to about 1/4-inch thickness, then season lightly with salt and pepper on both sides.
  2. Place 1-2 sage leaves and a slice of prosciutto on each chicken piece, securing them with toothpicks if needed.
  3. Dredge the chicken pieces lightly in all-purpose flour, shaking off any excess.
  4. Heat olive oil in a large skillet over medium-high heat. Place chicken prosciutto-side down and cook for 3-4 minutes until golden and crispy.
  5. Flip the chicken and cook for another 3-4 minutes until cooked through. Remove chicken from the skillet and set aside.
