  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning; meanwhile, cut the chicken breast into 1-inch (2.5 cm) cubes.
  2. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, smoked paprika, ground cumin, and dried oregano; season with salt and pepper to taste.
  3. Add the chicken cubes to the marinade, toss to coat thoroughly, then cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).
  4. Cut the onion and bell pepper into 1-inch (2.5 cm) pieces, similar in size to the chicken cubes.
