👨🍳 Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning; meanwhile, cut the chicken breast into 1-inch (2.5 cm) cubes.
- In a large bowl, whisk together the olive oil, lemon juice, minced garlic, smoked paprika, ground cumin, and dried oregano; season with salt and pepper to taste.
- Add the chicken cubes to the marinade, toss to coat thoroughly, then cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).
- Cut the onion and bell pepper into 1-inch (2.5 cm) pieces, similar in size to the chicken cubes.
- Thread the marinated chicken cubes, onion, and bell pepper alternately onto the soaked skewers, making sure not to pack them too tightly.
- Preheat your grill (or grill pan) to medium-high heat. Place the skewers on the hot grill and cook for 10-14 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
- Remove the skewers from the grill and let them rest for a few minutes before serving. Garnish with fresh parsley if desired.
