👨🍳 Instructions
- Cook soba noodles according to package instructions until al dente; drain, rinse with cold water, and set aside. Slice chicken breast into thin strips.
- In a small bowl, whisk together soy sauce, mirin, sake (if using), grated ginger, and minced garlic to create the sauce.
- Heat vegetable oil in a large wok or skillet over medium-high heat. Add chicken strips and stir-fry until cooked through and lightly browned, about 3-5 minutes. Remove chicken and set aside.
- Add julienned carrots, sliced red bell pepper, and broccoli florets to the wok. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
- Return the cooked chicken to the wok along with the prepared soba noodles and the sauce. Toss everything together to coat evenly and heat through for 1-2 minutes.
- Serve immediately, garnished with sliced green onions and a sprinkle of sesame seeds.
