👨‍🍳 Instructions

  1. Cook soba noodles according to package instructions until al dente; drain, rinse with cold water, and set aside. Slice chicken breast into thin strips.
  2. In a small bowl, whisk together soy sauce, mirin, sake (if using), grated ginger, and minced garlic to create the sauce.
  3. Heat vegetable oil in a large wok or skillet over medium-high heat. Add chicken strips and stir-fry until cooked through and lightly browned, about 3-5 minutes. Remove chicken and set aside.
