Chicken Souvlaki

👨🍳 Instructions
- Cut chicken breast into 1-inch cubes. In a bowl, combine chicken with 15g olive oil, 10g lemon juice, minced 5g garlic, 1g dried oregano, black pepper, and 1g salt. Mix well and marinate for at least 30 minutes, or ideally 2-4 hours in the refrigerator.
- While chicken marinates, prepare the tzatziki: grate 5g cucumber, squeeze out excess water. In a small bowl, combine 40g Greek yogurt, grated cucumber, 2g minced garlic, 1g fresh dill, 2g olive oil, and 0.5g salt. Mix well and refrigerate.
- Thread the marinated chicken cubes onto wooden or metal skewers. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning.
- Preheat a grill or grill pan to medium-high heat. Grill the chicken skewers for 10-15 minutes, turning occasionally, until cooked through and nicely charred.
- Warm the pita bread slightly on the grill or in a dry pan. To assemble, spread a generous amount of tzatziki on a pita, add some sliced 30g tomato and 10g red onion, then top with the grilled chicken from the skewer.
