👨‍🍳 Instructions

  1. Cut chicken breast into 1-inch cubes and place in a bowl. Add 5g olive oil, lemon juice, 3g minced garlic, oregano, salt, and pepper; mix well and let marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  2. Prepare the tzatziki: grate the cucumber and squeeze out excess water. In a small bowl, combine Greek yogurt, grated cucumber, 1g minced garlic, fresh dill, 2g olive oil, red wine vinegar, salt, and pepper; stir well and chill.
  3. Thread the marinated chicken cubes onto wooden or metal skewers. Preheat a grill or grill pan to medium-high heat.
  4. Grill the chicken skewers for 8-12 minutes, turning occasionally, until cooked through and nicely charred. Warm the pita bread on the grill for 30 seconds to 1 minute per side.
  5. To assemble, spread a generous spoonful of tzatziki onto a warm pita. Remove the chicken from the skewer and place it on top, then add slices of tomato and red onion.
