Chicken Stroganoff

👨🍳 Instructions
- Slice chicken breast into thin strips. Chop the onion finely and slice the mushrooms. Season the chicken with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat. Brown the chicken strips in batches until lightly golden, then remove and set aside. Add the onion to the skillet and sauté until softened, about 3-5 minutes, then add the mushrooms and cook until tender and their liquid has evaporated.
- Sprinkle flour over the cooked onions and mushrooms, stir for 1 minute. Pour in chicken broth, scraping up any browned bits from the bottom of the pan, and bring to a simmer.
- Reduce heat to low. Stir in sour cream and Dijon mustard until smooth and heated through, but do not boil. Return the cooked chicken to the skillet, stir to coat, and simmer for a few minutes until heated through.
- Garnish with fresh parsley and serve immediately, typically over egg noodles, rice, or mashed potatoes.
