👨🍳 Instructions
- If using raw chicken, poach or bake it until cooked through, then let cool and shred into bite-sized pieces. If using pre-cooked chicken, simply shred it.
- In a large salad bowl, combine the shredded romaine lettuce, red cabbage, carrots, and sliced green onions.
- In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, grated ginger, minced garlic, vegetable oil, and a touch of honey or sugar until well combined.
- Add the shredded chicken, drained mandarin oranges, and sesame seeds to the large bowl with the vegetables.
- Pour the dressing over the salad ingredients, toss gently to coat everything evenly, and top with crispy chow mein noodles just before serving.
