👨🍳 Instructions
- Prepare the sauce base: In a serving bowl, combine chili oil, light soy sauce, black vinegar, minced garlic, minced ginger, Sichuan peppercorn powder, and a pinch of sugar. Mix well to combine.
- In a small pan, cook the ground pork over medium-high heat until browned and cooked through, breaking it apart with a spoon. Set aside.
- Bring a pot of water to a rolling boil. Cook the fresh wheat noodles according to package instructions until al dente.
- While the noodles cook, add the chicken broth to the serving bowl with the sauce base. Stir to combine the flavors.
- Drain the cooked noodles and immediately transfer them to the serving bowl with the sauce. Toss well to coat the noodles evenly.
- Top the noodles with the cooked ground pork, crushed roasted peanuts, chopped preserved mustard greens, and fresh scallions. Serve immediately.
