👨‍🍳 Instructions

  1. Rinse the whole chicken and place it in a large pot with 2.5 liters of cold water. Bring to a boil, then reduce heat and simmer gently for 1.5 hours, skimming off any foam.
  2. Remove the chicken from the pot, allow it to cool, then debone and shred the meat. Strain the broth through a fine-mesh sieve into a clean pot.
  3. Trim and thinly slice the white and light green parts of the leeks. Add the sliced leeks and pitted prunes to the strained broth.
  4. Bring the soup to a gentle simmer and cook for another 30-40 minutes, or until the leeks are tender. Season with salt and black pepper to taste.
  5. Return the shredded chicken meat to the pot and heat through for a few minutes. Serve hot, garnished with fresh chopped parsley.
