Com Rang (Vietnamese Fried Rice)

- Day-old cooked jasmine rice 180 g · 234 kcal
- Large eggs 100 g · 155 kcal
- Diced chicken breast 60 g · 96 kcal
- Frozen peas and carrots mix 50 g · 35 kcal
- Garlic, minced 5 g · 7 kcal
- Shallots, minced 10 g · 7 kcal
- Fish sauce 15 g · 10 kcal
- Soy sauce 10 g · 10 kcal

- Green onions, sliced 10 g · 3 kcal

👨🍳 Instructions
- Heat a large wok or skillet over medium-high heat with vegetable oil. Add minced garlic and shallots and stir-fry until fragrant, about 30 seconds.
- Add diced chicken to the wok and stir-fry until cooked through and lightly browned, about 3-4 minutes. Push the chicken to one side of the wok.
- Crack eggs into the empty side of the wok and scramble them until just set but still slightly moist. Break them into smaller pieces and mix with the chicken.
- Add the day-old cooked jasmine rice to the wok. Break up any clumps with your spatula and stir-fry, ensuring the rice is well coated with oil and egg, for 2-3 minutes.
- Stir in the frozen peas and carrots, fish sauce, soy sauce, and sugar. Continue to stir-fry for another 2-3 minutes until the vegetables are tender-crisp and all ingredients are evenly combined and heated through.
- Season with white pepper to taste. Garnish with sliced green onions before serving hot.
