👨‍🍳 Instructions

  1. Heat a large wok or skillet over medium-high heat with vegetable oil. Add minced garlic and shallots and stir-fry until fragrant, about 30 seconds.
  2. Add diced chicken to the wok and stir-fry until cooked through and lightly browned, about 3-4 minutes. Push the chicken to one side of the wok.
  3. Crack eggs into the empty side of the wok and scramble them until just set but still slightly moist. Break them into smaller pieces and mix with the chicken.
  4. Add the day-old cooked jasmine rice to the wok. Break up any clumps with your spatula and stir-fry, ensuring the rice is well coated with oil and egg, for 2-3 minutes.
  5. Stir in the frozen peas and carrots, fish sauce, soy sauce, and sugar. Continue to stir-fry for another 2-3 minutes until the vegetables are tender-crisp and all ingredients are evenly combined and heated through.
  6. Season with white pepper to taste. Garnish with sliced green onions before serving hot.
