👨‍🍳 Instructions

  1. Cut lamb shoulder into small 2-3 cm cubes. In a bowl, combine the lamb with olive oil, grated onion juice, minced garlic, tomato paste, red pepper paste, dried thyme, cumin, red pepper flakes, black pepper, and salt. Mix well to ensure the lamb is fully coated.
  2. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, allowing the flavors to meld. Thread the marinated lamb cubes tightly onto metal or presoaked wooden skewers.
  3. Preheat a grill to medium-high heat. Grill the skewers for 10-15 minutes, turning frequently, until the lamb is cooked through and has a nice char on all sides. Adjust grilling time based on desired doneness.
  4. While the lamb is grilling, prepare the onion salad: thinly slice a quarter of an onion and mix with sumac and finely chopped fresh parsley. Serve the hot Çöp Şiş skewers immediately with the fresh onion salad and optionally with lavash bread.
