👨🍳 Instructions
- Preheat your oven to 200°C (400°F). Pat the Cornish game hen dry with paper towels to ensure a crispy skin.
- In a small bowl, combine softened butter, minced garlic, chopped rosemary, and thyme. Season generously with salt and black pepper.
- Gently loosen the skin over the breast of the hen and spread half of the butter mixture underneath the skin. Rub the remaining butter mixture all over the outside of the hen.
- Stuff the cavity of the hen with the lemon halves and a few extra sprigs of rosemary and thyme. Drizzle with olive oil.
- Place the hen on a roasting rack in a pan and roast for 45-60 minutes, or until the internal temperature reaches 74°C (165°F) in the thickest part of the thigh.
- Once cooked, remove the hen from the oven, tent it loosely with foil, and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, ensuring a tender and moist roast.
