👨‍🍳 Instructions

  1. Thoroughly clean the cow foot, scraping off any hair and rinsing several times under cold water; cut into desired pieces.
  2. Place the cow foot in a large pot with water and a splash of vinegar; bring to a boil, then drain and rinse to remove impurities.
  3. Return the cleaned cow foot to the pot, add fresh water, half of the chopped onion, half of the minced garlic, allspice berries, and thyme sprigs. Pressure cook for 60-90 minutes or simmer for 2.5-3.5 hours until tender.
  4. While the cow foot cooks, peel and chop carrots, potatoes, and yam. Mince the remaining onion, garlic, and scotch bonnet pepper.
  5. Once the cow foot is tender, add the chopped carrots, potatoes, and yam to the pot. Simmer for 15-20 minutes until they begin to soften.
  6. To make dumplings, combine wheat flour with a pinch of salt and enough water to form a firm dough. Roll the dough into small, elongated 'spinners' or 'cock-soup' dumplings.
  7. Add the okra, prepared dumplings, remaining chopped onion, garlic, and scotch bonnet pepper (whole for less spice, minced for more) to the pot. Continue to simmer for 15-20 minutes until dumplings are cooked through and vegetables are tender.
  8. Season with salt and black pepper to taste. Remove thyme sprigs and serve hot, garnished with fresh scallions.
