  1. Preheat oven to 200°C (400°F). Pat the turkey breast dry with paper towels and season generously with salt and black pepper.
  2. In a small saucepan, combine cranberries, orange juice, orange zest, brown sugar, chicken broth, and fresh thyme. Bring to a simmer over medium heat, stirring occasionally, until cranberries burst and sauce slightly thickens, about 8-10 minutes.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the turkey breast for 2-3 minutes per side until golden brown.
  4. Pour about half of the cranberry sauce over the turkey breast in the skillet. Transfer the skillet to the preheated oven and roast for 20-30 minutes, or until the internal temperature reaches 74°C (165°F).
  5. Once cooked, remove the turkey from the oven and let it rest on a cutting board for 5-10 minutes before slicing. This allows the juices to redistribute, ensuring a tender and moist result.
  6. Slice the turkey breast and serve with the remaining cranberry sauce. Garnish with additional fresh thyme if desired.
