👨🍳 Instructions
- In a large pot, brown the pork ribs in vegetable oil over medium-high heat until golden, then remove and set aside. In the same pot, sauté chopped onion and garlic until fragrant.
- Return the pork ribs to the pot, add the crushed corn, diced potatoes, carrots, green peas, cumin powder, and sufficient water to cover all ingredients. Season with salt.
- Bring to a boil, then reduce heat to low, cover, and simmer for 60-75 minutes, or until the pork is tender and the cuchuco and potatoes are cooked through and the soup has thickened. Stir occasionally to prevent sticking.
- Ladle the hot Cuchuco soup into bowls, garnish with fresh cilantro, and serve immediately.
