👨‍🍳 Instructions

  1. Prepare vegetables: Slice the onion, cut carrots into rounds or half-rounds, and chop potatoes into bite-sized chunks.
  2. In a pot, sauté the sliced pork until lightly browned; remove and set aside.
  3. In the same pot, add onions, carrots, and potatoes, and sauté for a few minutes until onions soften slightly.
  4. Add dashi stock, soy sauce, mirin, and sake to the pot; bring to a boil, then reduce heat and simmer until vegetables are tender.
  5. Stir in the Japanese curry roux blocks until fully dissolved and the sauce thickens; return the cooked pork to the pot.
  6. Cook udon noodles separately according to package instructions, then drain well.
  7. Divide the hot udon noodles into serving bowls, ladle the rich curry sauce over them, and garnish with sliced green onions.
