👨‍🍳 Instructions

  1. Rinse the chicken thoroughly, pat it dry, and season generously inside and out with salt and pepper.
  2. Prepare the stuffing: Sauté chopped onion in olive oil until softened, then add ground beef and cook until browned, breaking it apart.
  3. Add rinsed rice and mixed spices to the pan with meat, stir well, then add enough water or broth to cover and simmer until liquid is absorbed and rice is par-cooked.
  4. Stir in pine nuts to the par-cooked rice mixture, then carefully stuff the chicken cavity with the rice mixture.
  5. Secure the chicken's opening with kitchen twine or skewers, truss the legs, and place it in a roasting pan.
  6. Melt butter and brush it generously over the chicken's skin. Roast in a preheated oven at 180°C (350°F) for 1.5 to 2 hours, or until golden brown and cooked through.
  7. Let the chicken rest for 10-15 minutes before carving to allow juices to redistribute. Serve warm, garnished with fresh parsley.
