👨‍🍳 Instructions

  1. Cut chicken thighs into bite-sized pieces and marinate with a pinch of salt, pepper, and a dash of mirin (rice wine) for at least 15 minutes.
  2. In a bowl, combine soy sauce, gochujang, honey, minced garlic, grated ginger, sesame oil, and remaining mirin; mix well to create the sauce.
  3. Thread the marinated chicken pieces onto bamboo skewers, alternating with 1-inch pieces of green onion.
  4. Heat a grill or a large grill pan over medium-high heat and lightly brush with vegetable oil.
  5. Place the skewers on the hot grill, cooking for 2-3 minutes per side until lightly browned.
  6. Generously brush the skewers with the prepared sauce and continue grilling, turning and basting frequently, for another 5-7 minutes until chicken is cooked through and glazed.
  7. Remove from heat, garnish with sesame seeds, and serve immediately.
