  1. Soak chana dal in water for at least 30 minutes, then drain. In a large pot or pressure cooker, heat oil over medium heat.
  2. Add diced onions and sauté until golden brown. Stir in ginger-garlic paste and green chilies, cooking for another minute until fragrant.
  3. Add the lamb pieces and brown them on all sides. Stir in diced tomatoes and mixed spices (turmeric, chili, cumin, coriander powder, garam masala). Cook until oil separates.
  4. Add the soaked and drained chana dal, salt, and water. Bring to a boil, then reduce heat, cover, and simmer until lamb and dal are tender. (If using a pressure cooker, cook for 20-25 minutes after first whistle).
  5. Once cooked, check seasoning and consistency. Garnish with fresh cilantro before serving hot with rice or bread.
