👨‍🍳 Instructions

  1. Preheat your oven to 180°C (350°F). Heat olive oil in a large oven-safe pot or Dutch oven over medium heat.
  2. Add chopped onion and sauté for 5-7 minutes until softened and translucent. Stir in minced garlic and cook for another minute until fragrant.
  3. Stir in the diced red and green bell peppers, cooking for about 5 minutes until they begin to soften. Add the sweet paprika and cook for another minute.
  4. Pour in the canned diced tomatoes and vegetable broth. Bring the mixture to a simmer, then stir in the rice.
  5. Cover the pot and transfer it to the preheated oven. Bake for 30-35 minutes, or until the rice is tender and has absorbed most of the liquid.
  6. Remove Djuvec from the oven and let it rest, covered, for 5-10 minutes before serving. Garnish with fresh parsley.
