👨🍳 Instructions
- Prepare all ingredients: Shred the cooked roast duck meat, beat the eggs, dice the carrots, chop the scallions, and mince the garlic and ginger.
- Heat a wok or large skillet over high heat, then add the vegetable oil.
- Pour in the beaten eggs, quickly scramble them until cooked through but still soft, then remove from the wok and set aside.
- Add a little more oil to the wok if necessary, then stir-fry the minced garlic, ginger, diced carrots, and frozen peas for 2-3 minutes until slightly tender.
- Add the shredded duck and day-old cooked rice to the wok, breaking up any clumps of rice and stirring constantly to combine.
- Pour in the soy sauce and oyster sauce, stirring well to ensure all ingredients are evenly coated with the savory sauce.
- Return the scrambled eggs to the wok, add most of the chopped scallions, stir briefly to combine, and finish with a drizzle of sesame oil.
- Garnish with the remaining scallions and serve hot immediately.
