👨‍🍳 Instructions

  1. Prepare all ingredients: Shred the cooked roast duck meat, beat the eggs, dice the carrots, chop the scallions, and mince the garlic and ginger.
  2. Heat a wok or large skillet over high heat, then add the vegetable oil.
  3. Pour in the beaten eggs, quickly scramble them until cooked through but still soft, then remove from the wok and set aside.
  4. Add a little more oil to the wok if necessary, then stir-fry the minced garlic, ginger, diced carrots, and frozen peas for 2-3 minutes until slightly tender.
  5. Add the shredded duck and day-old cooked rice to the wok, breaking up any clumps of rice and stirring constantly to combine.
  6. Pour in the soy sauce and oyster sauce, stirring well to ensure all ingredients are evenly coated with the savory sauce.
  7. Return the scrambled eggs to the wok, add most of the chopped scallions, stir briefly to combine, and finish with a drizzle of sesame oil.
  8. Garnish with the remaining scallions and serve hot immediately.
