Duck Ragu with Pappardelle

👨🍳 Instructions
- Pat duck legs dry with paper towels; season generously with salt and black pepper.
- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat; sear duck legs skin-side down until golden brown and crisp, about 8-10 minutes.
- Remove duck legs and set aside, pouring off all but 2 tablespoons of rendered fat.
- Add chopped onion, carrots, and celery to the pot; sauté over medium heat until softened, about 8-10 minutes.
- Stir in minced garlic and tomato paste; cook for 2 minutes until fragrant.
- Deglaze the pot with red wine, scraping up any browned bits from the bottom.
- Return duck legs to the pot; add crushed tomatoes, chicken stock, bay leaf, and thyme.
- Bring to a simmer, then reduce heat to low, cover, and cook for 2.5-3 hours, or until duck is fall-off-the-bone tender.
- Remove duck legs from the pot; shred the meat from the bones using two forks and discard bones and skin.
- Return shredded duck meat to the ragu sauce; simmer uncovered for another 20-30 minutes, allowing the sauce to thicken.
- Meanwhile, cook pappardelle pasta according to package directions until al dente.
- Serve the duck ragu over the cooked pappardelle, garnished with grated Parmesan cheese and fresh parsley.
