👨‍🍳 Instructions

  1. Prepare all ingredients: shred the roasted duck, julienne cucumber and carrot, and cook vermicelli noodles according to package instructions. Rinse noodles with cold water and drain well.
  2. Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for 15-20 seconds until softened and pliable.
  3. Lay the softened wrapper flat on a clean, damp surface. Arrange a small amount of lettuce, vermicelli, duck, cucumber, carrot, mint, and cilantro near the bottom edge.
  4. Fold the bottom edge of the wrapper over the filling, then fold in the sides tightly. Roll it up firmly from bottom to top to create a tight roll.
  5. Repeat with the remaining ingredients to make all the rolls. Serve immediately with hoisin sauce and peanut dipping sauce on the side.
