👨🍳 Instructions
- Prepare all ingredients: shred the roasted duck, julienne cucumber and carrot, and cook vermicelli noodles according to package instructions. Rinse noodles with cold water and drain well.
- Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for 15-20 seconds until softened and pliable.
- Lay the softened wrapper flat on a clean, damp surface. Arrange a small amount of lettuce, vermicelli, duck, cucumber, carrot, mint, and cilantro near the bottom edge.
- Fold the bottom edge of the wrapper over the filling, then fold in the sides tightly. Roll it up firmly from bottom to top to create a tight roll.
- Repeat with the remaining ingredients to make all the rolls. Serve immediately with hoisin sauce and peanut dipping sauce on the side.
