- Cooked white rice (day-old) 200 g · 260 kcal
- Frozen shelled edamame 75 g · 90 kcal
- Large egg 50 g · 70 kcal
- Carrot, diced 30 g · 12 kcal

👨🍳 Instructions
- Heat half of the vegetable oil in a large wok or skillet over medium-high heat. Add the whisked egg and scramble until just cooked through, then remove and set aside.
- Add the remaining vegetable oil to the wok. Stir-fry the minced garlic, grated ginger, and diced carrots for 2-3 minutes until fragrant and slightly tender.
- Stir in the edamame and peas, cooking for another 2-3 minutes. Push the vegetables to one side of the wok.
- Add the day-old cooked white rice to the empty side of the wok and break it apart with a spatula. Drizzle soy sauce and sesame oil over the rice and vegetables.
- Combine everything in the wok and stir-fry for 3-5 minutes, ensuring the rice is heated through and slightly crispy. Return the scrambled egg to the wok.
- Toss gently to combine the egg with the rice and vegetables. Garnish with chopped green onions before serving immediately.
