👨‍🍳 Instructions

  1. Cook the edamame spaghetti according to package instructions until al dente; reserve about 1/4 cup of pasta water before draining. Set aside.
  2. In a large skillet over medium heat, add olive oil and minced garlic. Sauté for 1 minute until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes, until they start to soften. Stir in the fresh spinach, lemon juice, red pepper flakes, and salt, cooking until spinach is just wilted.
  4. Add the cooked edamame spaghetti and reserved pasta water to the skillet. Toss everything together to combine, ensuring the pasta is well coated. Cook for another 1-2 minutes until heated through.
