👨🍳 Instructions
- Cook the edamame spaghetti according to package instructions until al dente; reserve about 1/4 cup of pasta water before draining. Set aside.
- In a large skillet over medium heat, add olive oil and minced garlic. Sauté for 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes, until they start to soften. Stir in the fresh spinach, lemon juice, red pepper flakes, and salt, cooking until spinach is just wilted.
- Add the cooked edamame spaghetti and reserved pasta water to the skillet. Toss everything together to combine, ensuring the pasta is well coated. Cook for another 1-2 minutes until heated through.
- Remove from heat, stir in the chopped fresh basil, and serve immediately. Garnish with extra basil if desired.
