  1. Pat elk steaks dry with paper towels and season generously with salt and freshly ground black pepper on both sides. Let them rest at room temperature for 20-30 minutes.
  2. Heat olive oil in a heavy-bottomed skillet (cast iron works best) over medium-high heat until shimmering. Add garlic cloves and rosemary sprigs to infuse the oil.
  3. Place elk steaks in the hot skillet; sear for 2-4 minutes per side for medium-rare, depending on thickness, forming a beautiful crust. For medium, cook a minute longer per side.
  4. Remove steaks from the skillet and let them rest on a cutting board, loosely tented with foil, for 5-10 minutes. This allows juices to redistribute for a tender and flavorful steak.
  5. Slice against the grain if desired and serve immediately, optionally with the infused garlic and rosemary.
