  • All-purpose wheat flour 60 g · 216 kcal
  • Large egg 25 g · 39 kcal
  • Water 20 g · 0 kcal
  • Unsalted butter 10 g · 72 kcal
  • Turkish White Cheese (Beyaz Peynir) 20 g · 52 kcal

👨‍🍳 Instructions

  1. Combine flour, egg, and a pinch of salt in a bowl, gradually adding water to form a firm dough. Knead until smooth, then cover and let rest for 30 minutes.
  2. Divide the dough into smaller portions and roll each thinly on a floured surface, creating large sheets. Allow them to air dry slightly for 15-20 minutes.
  3. Fold the slightly dried dough sheets and cut them into thin, short strips, about 1-2 cm wide and 2-3 cm long, to create the erişte noodles.
  4. Bring a large pot of salted water to a boil. Add the erişte noodles and cook for 5-7 minutes until al dente, stirring occasionally to prevent sticking.
  5. While noodles cook, melt the unsalted butter in a small pan until fragrant and slightly browned.
  6. Drain the cooked erişte noodles and transfer them to a serving plate. Pour the melted butter over the noodles and crumble the Turkish white cheese on top before serving hot.
