👨‍🍳 Instructions

  1. Pat the fillet mignon dry with paper towels and season generously with salt and freshly ground black pepper on all sides.
  2. Heat olive oil in a heavy-bottomed, oven-safe skillet over high heat until shimmering. Carefully place the fillets in the hot skillet.
  3. Sear the fillets for 2-3 minutes per side until a deep, golden-brown crust forms, then reduce heat to medium.
  4. Add butter to the skillet, tilting it slightly to baste the fillets with the melted butter for another 2-3 minutes.
  5. Transfer the skillet to a preheated oven at 200°C (400°F) for 5-7 minutes for medium-rare, or longer for desired doneness. Use a meat thermometer to check internal temperature.
  6. Remove from oven, transfer the fillets to a cutting board, and let them rest for 5-10 minutes before slicing and serving. This allows the juices to redistribute.
