👨🍳 Instructions
- Season chicken pieces generously with salt and pepper. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
- Sear chicken pieces in batches until deeply browned on all sides; remove and set aside.
- Reduce heat to medium, add chopped onion, bell pepper, and garlic to the pot, and sauté until softened, about 5-7 minutes.
- Stir in crushed tomatoes, white wine, chicken broth, bay leaves, dried oregano, and ground cumin; bring to a simmer.
- Return the seared chicken to the pot, ensuring it's mostly submerged in the sauce. Add the peeled and cubed potatoes.
- Cover the pot and simmer for 30 minutes, or until the chicken is tender and cooked through, and potatoes are fork-tender.
- Stir in pitted green olives and drained capers; continue to simmer uncovered for another 5-10 minutes to allow flavors to meld and sauce to thicken slightly.
- Adjust seasoning with salt and pepper if needed. Remove bay leaves before serving.
- Garnish with fresh chopped parsley and serve hot, traditionally with white rice.
