  1. Cut chicken breast into bite-sized pieces; in a bowl, toss the chicken with 1 tsp cornstarch until lightly coated, then set aside.
  2. In a separate small bowl, whisk together soy sauce, oyster sauce, sugar, and the remaining 1 tsp cornstarch to create the sauce.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until lightly browned and cooked through, about 5-7 minutes; remove chicken and set aside.
  4. Add minced garlic to the same skillet and sauté for 30 seconds until fragrant, being careful not to burn it.
  5. Return the cooked chicken to the skillet, pour in the prepared sauce, and add the freshly ground black pepper.
  6. Stir constantly for 1-2 minutes until the sauce thickens and coats the chicken completely. Serve immediately, optionally with steamed jasmine rice.
