👨🍳 Instructions
- Wash basmati rice thoroughly under cold water until the water runs clear, then soak it for 20-30 minutes and drain well.
- In a heavy-bottomed pot or pressure cooker, heat the ghee over medium heat; add cashew nuts and raisins, fry until golden, then remove and set aside.
- In the same ghee, add whole spices (cardamom pods, cloves, cinnamon stick, bay leaf) and sauté for a few seconds until fragrant.
- Add the sliced onion and sauté until it turns light golden brown, then add the drained basmati rice and gently stir for 1-2 minutes.
- Pour in water, add salt, bring to a boil, then reduce heat to low, cover tightly, and cook for 15-20 minutes until all water is absorbed and rice is tender.
- Once cooked, gently fluff the rice with a fork, stir in the fried cashews and raisins, and serve hot.
