👨‍🍳 Instructions

  1. Wash basmati rice thoroughly under cold water until the water runs clear, then soak it for 20-30 minutes and drain well.
  2. In a heavy-bottomed pot or pressure cooker, heat the ghee over medium heat; add cashew nuts and raisins, fry until golden, then remove and set aside.
  3. In the same ghee, add whole spices (cardamom pods, cloves, cinnamon stick, bay leaf) and sauté for a few seconds until fragrant.
  4. Add the sliced onion and sauté until it turns light golden brown, then add the drained basmati rice and gently stir for 1-2 minutes.
  5. Pour in water, add salt, bring to a boil, then reduce heat to low, cover tightly, and cook for 15-20 minutes until all water is absorbed and rice is tender.
  6. Once cooked, gently fluff the rice with a fork, stir in the fried cashews and raisins, and serve hot.
