👨🍳 Instructions
- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Season goat meat liberally with salt and black pepper.
- Sear the goat meat in batches until browned on all sides, then remove and set aside. Add onions to the pot and sauté until softened, about 5-7 minutes.
- Add garlic, carrots, bell pepper, cumin, smoked paprika, chili powder, and black pepper to the pot. Cook for 2-3 minutes until fragrant.
- Return the seared goat meat to the pot. Stir in the diced tomatoes, beef broth, dried thyme, and bay leaves. Bring to a simmer.
- Reduce heat to low, cover, and simmer for 1.5 hours, stirring occasionally. Add potatoes and continue to simmer for another 30-45 minutes, or until meat and potatoes are tender.
- Remove bay leaves, taste and adjust seasoning with additional salt and pepper if needed. Serve hot, garnished with fresh parsley if desired.
