👨‍🍳 Instructions

  1. Rinse the beef brisket thoroughly and place it in a large pot with enough water to cover, along with large pieces of onion, garlic cloves, and ginger slices. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until the beef is tender.
  2. Remove the beef from the broth and let it cool slightly, then slice it thinly against the grain. Strain the broth to remove solids and season it with soy sauce and salt to taste.
  3. Prepare the egg jidan: Whisk an egg and fry a thin omelet in a lightly oiled pan. Let it cool, then slice it into thin strips for garnish.
  4. Boil the Korean wheat noodles according to package directions until al dente. Drain well and rinse briefly under cold water to prevent sticking.
  5. To serve, place a portion of cooked noodles into a large bowl. Arrange sliced beef, egg jidan strips, and chopped green onions on top of the noodles.
  6. Carefully ladle the hot, seasoned beef broth over the ingredients in the bowl. Drizzle with a few drops of sesame oil just before serving for added aroma.
