- Prepare the chicken marinade: In a bowl, combine 15g olive oil, 15g lemon juice, 3g minced garlic, and 1g dried oregano. Season with salt and pepper.
- Add the 150g chicken breast to the marinade, ensuring it's fully coated. Let it marinate for at least 15 minutes, or up to 30 minutes for deeper flavor.
- While chicken marinates, cook 150g brown rice according to package instructions. Prepare the fresh vegetables by dicing 50g cucumber, halving 80g cherry tomatoes, and thinly slicing 20g red onion.
- Prepare the Tzatziki: In a small bowl, combine 70g Greek yogurt, 3g minced garlic (from the 6g total, save some for chicken), and 5g chopped fresh dill. Stir well and season to taste.
- Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken breast for 4-6 minutes per side, or until cooked through and nicely charred.
