- Cooked Chicken (shredded) 50 g · 83 kcal

👨🍳 Instructions
- If using bone-in chicken, place it in a large pot with 2.5-3 liters of water, bring to a boil, skim off foam, then reduce heat and simmer for 40-50 minutes until cooked through. Remove chicken, let cool, then shred the meat and set aside; strain the broth.
- Peel and dice potatoes into medium cubes. Add them to the strained broth and cook for about 15-20 minutes until tender.
- While potatoes cook, finely chop onion and grate carrot. Sauté the onion in vegetable oil in a separate pan until translucent, then add the grated carrot and cook for another 5-7 minutes until soft.
- Add the sautéed onion and carrot mixture to the pot with potatoes and broth. Bring to a boil, then reduce heat.
- Wash sorrel thoroughly, pat dry, and chop finely. Roughly chop fresh dill and parsley.
- Add chopped sorrel to the soup, stir, and cook for only 2-3 minutes, as sorrel cooks very quickly. Season with salt and black pepper to taste.
- Just before serving, stir in the shredded chicken meat (if using) and freshly chopped dill and parsley. Serve hot, garnished with a spoonful of sour cream and half a hard-boiled egg per serving.
