  • Glutinous rice flour (Mochiko) 100 g · 360 kcal

  • Sweet red bean paste (Anko) 150 g · 350 kcal

👨‍🍳 Instructions

  1. In a microwave-safe bowl, combine glutinous rice flour, granulated sugar, and matcha powder. Whisk them together until well mixed.
  2. Gradually add water, stirring continuously until the mixture is smooth and lump-free. Cover the bowl loosely with plastic wrap.
  3. Microwave on high for 1 minute. Stir well, then microwave for another 1-2 minutes until the dough is translucent and sticky.
  4. Dust a clean surface generously with potato starch. Carefully transfer the hot mochi dough onto the prepared surface.
  5. Once cooled enough to handle, dust your hands with potato starch and gently knead the mochi a few times. Divide the dough into 6 equal pieces.
  6. Flatten each mochi piece into a disc. Take a portion of sweet red bean paste and roll it into a ball, then place it in the center of the mochi disc.
  7. Gently gather the edges of the mochi dough around the filling, pinching them together to seal. Roll it gently between your palms to form a smooth ball.
  8. Repeat with the remaining mochi pieces and anko. Dust the finished mochi with additional potato starch before serving to prevent sticking.
