Grilled Pork (Thịt Nướng)

- Pork shoulder (or pork loin), thinly sliced 150 g · 300 kcal
- Fish sauce 15 g · 10 kcal
- Granulated sugar 6 g · 24 kcal
- Soy sauce 5 g · 5 kcal
- Minced garlic 4 g · 6 kcal
- Minced shallots 10 g · 7 kcal
- Minced lemongrass 5 g · 5 kcal
- Sesame oil 4 g · 36 kcal
- Black pepper, freshly ground 1 g · 3 kcal
- Vegetable oil (for grilling) 4 g · 36 kcal
👨🍳 Instructions
- Thinly slice the pork shoulder against the grain into pieces about 1/4 inch thick; pound lightly if needed for tenderness.
- In a bowl, combine fish sauce, granulated sugar, soy sauce, minced garlic, shallots, lemongrass, sesame oil, black pepper, and half of the vegetable oil to create the marinade.
- Add the sliced pork to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 2 hours, or preferably overnight.
- Preheat a grill or grill pan to medium-high heat. Lightly oil the grill grates or pan with the remaining vegetable oil.
- Place the pork slices on the hot grill in a single layer, ensuring not to overcrowd the cooking surface. Cook for 2-4 minutes per side, or until beautifully charred and cooked through.
- Remove the grilled pork from the heat and let it rest for a few minutes before serving. Serve hot with rice, vermicelli noodles, fresh herbs, and nuoc cham.
