👨‍🍳 Instructions

  1. Thinly slice the pork shoulder against the grain into pieces about 1/4 inch thick; pound lightly if needed for tenderness.
  2. In a bowl, combine fish sauce, granulated sugar, soy sauce, minced garlic, shallots, lemongrass, sesame oil, black pepper, and half of the vegetable oil to create the marinade.
  3. Add the sliced pork to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 2 hours, or preferably overnight.
  4. Preheat a grill or grill pan to medium-high heat. Lightly oil the grill grates or pan with the remaining vegetable oil.
  5. Place the pork slices on the hot grill in a single layer, ensuring not to overcrowd the cooking surface. Cook for 2-4 minutes per side, or until beautifully charred and cooked through.
  6. Remove the grilled pork from the heat and let it rest for a few minutes before serving. Serve hot with rice, vermicelli noodles, fresh herbs, and nuoc cham.
