  1. Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add diced chicken and brown on all sides; remove and set aside.
  2. Add chopped onion to the pot and sauté until softened, about 5-7 minutes. Stir in minced garlic, grated ginger, bell pepper, and scotch bonnet (if using), cooking for another 2-3 minutes until fragrant.
  3. Return the browned chicken to the pot. Stir in crushed tomatoes, chicken broth, peanut butter, sweet potato, smoked paprika, and curry powder.
  4. Bring the stew to a simmer, then reduce heat to low, cover, and cook for 45-60 minutes, or until the chicken is tender and sweet potatoes are soft. Stir occasionally to prevent sticking.
  5. Stir in fresh spinach and cook until wilted, about 5 minutes. Season the stew with salt and pepper to taste before serving.
