👨🍳 Instructions
- Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add diced chicken and brown on all sides; remove and set aside.
- Add chopped onion to the pot and sauté until softened, about 5-7 minutes. Stir in minced garlic, grated ginger, bell pepper, and scotch bonnet (if using), cooking for another 2-3 minutes until fragrant.
- Return the browned chicken to the pot. Stir in crushed tomatoes, chicken broth, peanut butter, sweet potato, smoked paprika, and curry powder.
- Bring the stew to a simmer, then reduce heat to low, cover, and cook for 45-60 minutes, or until the chicken is tender and sweet potatoes are soft. Stir occasionally to prevent sticking.
- Stir in fresh spinach and cook until wilted, about 5 minutes. Season the stew with salt and pepper to taste before serving.
