  2. Cover the dough with a damp cloth or plastic wrap and let it rest at room temperature for at least 30 minutes.
  3. Divide the dough into smaller, even-sized portions (e.g., 2-3 cm thick strips or logs), then lightly coat each piece with a small amount of vegetable oil to prevent sticking.
  4. Cover the oiled dough pieces again and let them rest for another 30-60 minutes; this second rest is crucial for elasticity.
  5. Bring a large pot of salted water to a rolling boil. Take one dough strip, flatten it slightly, and then grasp both ends, gently pulling and stretching it, slapping it on the counter to thin and lengthen it.
  6. Once the noodles reach your desired thickness and length, immediately drop them into the boiling water. Cook for 2-4 minutes until they float and are tender but still chewy.
  7. While noodles cook, prepare the sauce by mixing soy sauce, rice vinegar, sesame oil, minced garlic, and chopped scallions in a small bowl.
