  1. Cut chicken breast into 1-inch pieces. In a bowl, whisk together rice vinegar, low sodium soy sauce, pineapple juice, honey, grated ginger, minced garlic, and cornstarch for the sauce; set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. Add bell peppers, onion, and broccoli florets to the same skillet; stir-fry for 3-5 minutes until vegetables are crisp-tender. Return the cooked chicken to the skillet.
