👨🍳 Instructions
- Cut chicken breast into 1-inch pieces. In a bowl, whisk together rice vinegar, low sodium soy sauce, pineapple juice, honey, grated ginger, minced garlic, and cornstarch for the sauce; set aside.
- Heat olive oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add bell peppers, onion, and broccoli florets to the same skillet; stir-fry for 3-5 minutes until vegetables are crisp-tender. Return the cooked chicken to the skillet.
- Stir in the pineapple chunks and pour the prepared sauce over the chicken and vegetables. Cook, stirring constantly, until the sauce thickens and coats everything, about 2-3 minutes.
- Remove from heat, drizzle with sesame oil for flavor, and serve immediately, optionally garnished with fresh chopped green onions.
