  1. Preheat oven to 200°C (400°F). Trim any excess fat or silver skin from the beef tenderloin and pat it thoroughly dry with paper towels.
  2. In a small bowl, combine minced rosemary, thyme, parsley, garlic, olive oil, Dijon mustard, 8g of salt, and a generous pinch of black pepper to form a thick paste.
  3. Spread the herb paste evenly over the entire surface of the beef tenderloin, pressing gently to adhere.
  4. Heat a large, oven-safe skillet over medium-high heat with a tablespoon of olive oil. Sear the tenderloin on all sides until deeply golden brown, about 2-3 minutes per side.
  5. Transfer the skillet to the preheated oven and roast for 20-30 minutes, or until an internal temperature of 57-60°C (135-140°F) is reached for medium-rare.
  6. Remove the tenderloin from the oven and transfer it to a cutting board. Tent it loosely with foil and let it rest for 10-15 minutes before slicing; this allows the juices to redistribute for a tender, flavorful result.
