👨🍳 Instructions
- Prepare the hummus: In a food processor, combine cooked chickpeas, tahini, lemon juice, garlic, and a pinch of salt. Process until smooth, gradually adding water until a creamy consistency is achieved.
- Prepare the kawarma: In a pan, heat a tablespoon of olive oil over medium-high heat. Add the pine nuts and toast them until golden brown, then remove and set aside.
- In the same pan, add the ground lamb, ground cumin, ground paprika, and a pinch of salt and pepper. Cook, breaking up the meat, until it is browned and cooked through.
- To serve, spread the hummus onto a shallow plate, creating a slight well in the center. Spoon the cooked kawarma into the well, then scatter the toasted pine nuts and fresh parsley over the top.
- Drizzle with a final touch of olive oil before serving, traditionally accompanied by warm pita bread.
