- Inaniwa Udon noodles (dry) 100 g · 340 kcal
- Dashi stock 205 g · 10 kcal
- Soy sauce 24 g · 16 kcal
- Mirin 18 g · 33 kcal
- Scallions (chopped) 10 g · 3 kcal
- Nori seaweed (shredded) 1 g · 3 kcal
👨🍳 Instructions
- Bring a large pot of water to a rolling boil; add the Inaniwa udon noodles and cook according to package directions, typically 3-5 minutes, until tender but still firm.
- Drain the cooked noodles thoroughly, rinse briefly under cold water to stop cooking and remove excess starch, then drain again.
- In a small saucepan, gently heat the dashi stock, soy sauce, and mirin to combine them, but do not boil. This creates the mentsuyu-style dipping sauce or broth.
- Place the cooled Inaniwa udon noodles in a serving bowl, then pour the warm mentsuyu broth over them.
- Garnish with finely chopped scallions and shredded nori seaweed just before serving.
