Involtini di Pollo (Chicken Rolls)

👨🍳 Instructions
- Lay chicken breasts between two sheets of plastic wrap and pound them thin, about 1/4 inch (0.6 cm) thick. Season lightly with salt and pepper.
- On each chicken piece, place a slice of prosciutto and a slice of provolone cheese. Tightly roll up each breast and secure with a toothpick.
- Lightly dredge the involtini in all-purpose flour, shaking off any excess. This helps create a golden crust.
- Heat olive oil in a large skillet over medium-high heat. Sear the involtini on all sides until golden brown, about 2-3 minutes per side.
- Deglaze the pan with white wine, scraping up any browned bits from the bottom. Let it simmer for 1 minute to reduce slightly.
- Pour in the chicken broth and add fresh sage leaves. Reduce heat to medium-low, cover, and simmer for 5-7 minutes, or until chicken is cooked through.
- Remove involtini from the pan, stir in butter until melted, then remove toothpicks. Serve immediately with the pan sauce drizzled over.
